In baker's percentage. When dividing dough, 90g is one portion small portion.
Dissolve yeast in cold water.
Mix flour, salt, olive oil and water until dough is well mixed. Rest for 30 minutes covered.
Do one fold. Rest 30 minutes covered.
Divide into target number of portions. Form balls. Rest 20 minutes covered.
Roll each ball into a thin disk (12-14cm diameter, 5mm thickness).
Bake in pizza oven at 400°C for around 90 seconds. It should puff.
