Simple, with short ingredient list that I memorized on the second time I made this, it gives everything I would expect from a good chocolate fondant. Intense chocolate flavor, baked outside, chocolate lava on the inside. Pairs excellently with vanilla ice cream.
Start by melting chocolate (in cubes) with butter.
Tip: keep it on low heat and wait only until everything is melted and combined. This keep the temperature low and allow you to mix with other ingredients quicker.
Mix yolks, eggs with sugar.
Add flour and mix until all flour stripes are gone.
After letting butter and chocolate mix cool down a bit, mix it with other ingredients.
Pour the mixture into 4 ramekins.
Bake at 200°C. The time depends on whether you cook it fresh or straight from freezer. I watch the rameskins until the surface solidifies and a bump appears and then give it 2 more minutes to slightly set inside as well. Usually takes 10-14 minutes.
This dessert is essentially chocolate of your choice turned into a cake. Pay extra care to that when buying ingredients.
